Ingredients

large yellow potatoes, peeled and cut into cubes | 4 | |
large carrots, peeled and cut into cubes | 4 | |
baby turnips, peeled and cut into cubes | 2 | |
green or yellow beans | 15 | |
water | 500 ml (2 cups) | |
salt and pepper | To taste | |
fresh parsley, chopped | To taste |
Directions
- Trim and cut the beans in half. Set aside.
- Place all of the ingredients in a large saucepan, except for the parsley.
- Bring to a boil and then reduce the heat. Simmer for 30 minutes or until all of the vegetables are tender.
- Add a knob of butter and fresh parsley, to taste.
