Boiled Vegetables

This recipe is filled with healthy fall vegetables.

Ingredients

  Ingredients Quantitites
large yellow potatoes, peeled and cut into cubes 4
large carrots, peeled and cut into cubes 4
baby turnips, peeled and cut into cubes 2
green or yellow beans 15
water 500 ml (2 cups)
salt and pepper To taste
fresh parsley, chopped To taste

Directions

  1. Trim and cut the beans in half. Set aside.
  2. Place all of the ingredients in a large saucepan, except for the parsley.
  3. Bring to a boil and then reduce the heat. Simmer for 30 minutes or until all of the vegetables are tender.
  4. Add a knob of butter and fresh parsley, to taste.
