|large yellow potatoes, peeled and cut into cubes||4|
|large carrots, peeled and cut into cubes||4|
|baby turnips, peeled and cut into cubes||2|
|green or yellow beans||15|
|water||500 ml (2 cups)|
|salt and pepper||To taste|
|fresh parsley, chopped||To taste|
- Trim and cut the beans in half. Set aside.
- Place all of the ingredients in a large saucepan, except for the parsley.
- Bring to a boil and then reduce the heat. Simmer for 30 minutes or until all of the vegetables are tender.
- Add a knob of butter and fresh parsley, to taste.
