100 doughnuts for supper! A few years ago, I volunteered at a palliative care home in Rimouski and that’s how many I had to make one evening for a special supper.

Doughnuts

My recipe makes perfectly crisp, light, golden brown doughnuts.

Ingredients

  Ingredients Quantitites
sugar 250 ml (1 cup)
Butter 38 ml (2 ½ tablespoons)
eggs 3
milk 250 ml (1 cup)
baking powder 20 ml (4 teaspoons)
salt 5 ml (1 teaspoons)
flour 750 ml (3 cups)
canola oil, for frying

Directions

  1. In a bowl, cream the butter using an electric hand mixer. Stir in half of the sugar.
  2. Add the eggs and beat until the mixture is light and fluffy. Add the rest of the sugar. Mix well.
  3. Add the flour and mix well with a doughnut cutter. Divide the dough into two balls using your hands. Wrap in plastic wrap and refrigerate for 1 hour.
  4. On a floured work surface, roll out the dough to about a ½ inch (8 to 10 mm) thick. Cut out the doughnuts using a 3” (7.5 cm) round cookie cutter, and then cut out the doughnut holes using a small ¾” (2 cm) round cookie cutter. Reuse the leftovers. Let stand for 15 minutes at room temperature so that the dough dries out slightly and forms a nice crust when fried.
  5. In a large skillet, heat 2 cm of vegetable oil. When the oil simmers on contact with the dough, place 3 or 4 doughnuts in the skillet at a time. Fry for 2 to 3 minutes or until golden, turning halfway through. Fry the doughnut holes for 1 minute.
  6. Remove the doughnuts from the oil using a slotted spoon and place them on a paper towel to absorb any excess oil.
  7. Serve warm, ideally on the same day.
