Ingredients

onion, diced | 1 | |
fresh yellow beans | 750 ml to 1 litre (3 to 4 cups) | |
chicken stock | 1 litre (4 cups) | |
milk | 250 ml (1 cup) | |
salt | To taste | |
cornstarch | 45 ml (3 tablespoons) | |
bacon (optional) | 125 g |
Directions
- Cut the beans into 1 inch-long (2.5 cm) pieces.
- In a large pot, bring the onion, chopped beans, bacon and chicken stock to a boil.
- Simmer, uncovered, for 20 to 30 minutes, until all of the ingredients are tender and the stock reduces slightly.
- Dissolve the cornstarch in ¼ of the milk and then add the rest of the milk to the soup.
- Bring to a boil again, stirring occasionally.
- Serve immediately!
