Yellow Bean Soup (the best!)

Ingredients

  Ingredients Quantitites
onion, diced 1
fresh yellow beans 750 ml to 1 litre (3 to 4 cups)
chicken stock 1 litre (4 cups)
milk 250 ml (1 cup)
salt To taste
cornstarch 45 ml (3 tablespoons)
bacon (optional) 125 g

Directions

  1. Cut the beans into 1 inch-long (2.5 cm) pieces.
  2. In a large pot, bring the onion, chopped beans, bacon and chicken stock to a boil.
  3. Simmer, uncovered, for 20 to 30 minutes, until all of the ingredients are tender and the stock reduces slightly.
  4. Dissolve the cornstarch in ¼ of the milk and then add the rest of the milk to the soup.
  5. Bring to a boil again, stirring occasionally.
  6. Serve immediately!
